Baking, class, and Victorian recipes

I’m probably going to teach Gaskell’s North and South in the Spring as part of a survey of British literature for our majors. I think I’m going to try to bake this recipe found by Kate Flint. She too is teaching North and South, and I’ve always wanted to try baking from a Victorian recipe. I just haven’t been brave enough yet. (Same goes for knitting from a Victorian pattern, which all seem to be written in a vastly different short hand than today’s patterns.)
